Denumirea “butterfly” vine de la felul in care va fi taiat, amintind de un fluture. E simplu de preparat, sanatos si extrem de delicios. Pentru ca veti folosi un pui de mici dimensiuni, poate fi o portie pentru o singura persoana, doua cel mult. Daca il preparati in casa, e recomandabil sa o faceti cu ajutorul unui dublu-grill.</span><br />

Daca nu aveti un gratar dublu, acoperiti cu 2 straturi de folie de aluminiu si plasati deasupra o tigaie de fonta pe care o incingeti in prealabil. Se lasă câteva ore bune la macerat.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">4. Se împănează cu suviţe de slănină. Se introduce în cuptorul bine încins pentu aproximativ 1 şi 40 de minute. Friptura la cuptor trebuie stropită din când în când şi de câte ori zeama scade se adauga apă caldă pentru a nu lăsa grăsimea din tavă să se ardă.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">6. Pentru garnitură se curăţă cartofii şi se taie cuburi ca pentru piure.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">7. Se pun la fiert într-o cratiţă cu apă clocotită. Se lasă 10-15 minute şi se scurg de apă.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">8. Într-o tavă termorezistentă punem cartofii, uleiul şi condimentele. Se ţine la cuptor pentru 25-30 de minute până devin aurii.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">9. Când friptura şi cartofii sunt gata, se aranjează toate pe un platou. 1 pui de ţară mai zdravăn sau un cocoş tânăr (folosiţi pulpele, aripile sau pieptul, ce preferaţi. Ceea ce rămâne se poate folosi la o supă)<br />

o ceaşcă de ulei de măsline extravirgin<br />
1 căpăţână de usturoi românesc<br />
250 ml suc de roşii<br />
foi de dafin<br />
cimbru sau oregano uscat<br />
boia dulce, sare, piper<br />

1. Bucăţile de carne se şterg bine de apă, se aşează într-o tavă de cuptor şi se asezonează cu sare, piper, boia şi verdeţurile uscate. <br />

2. Se stropesc cu puţin ulei de măsline şi se acoperă cu o hârtie pergament (aceasta poate fi foarte maleabilă dacă o umeziţi sub robinet şi o şifonaţi cu atenţie, fără să se rupă).<br />

3. Daţi tava la cuptor pentru o oră şi 15 minute, la 180 de grade, apoi îndepărtaţi hârtia pergament, stropiţi carnea cu vinul sec şi lăsaţi la foc maxim încă 15 minute.<br />

4. În acest timp, pregătiţi un sos de roşii rapid: ceapa tocată se căleşte în uleiul de măsline, se adaugă sosul de roşii şi se condimentează. Amestecaţi bine din momentul în care începe să bolborosească, timp de 4-5 minute.<br />
Zdrobiţi căpăţâna de usturoi şi preparaţi un mujdei.<br />

Dar, iată că în cele din urmă am reuşit să recuperăm pozele pe care credeam că le-am pierdut :). După festinul de sărbători am făcut o tartă cu ce a mai rămas din curcan. Treptat se incorporează făina până obţinem un aluat uşor elastic. Se înfăşoară în folie de plastic şi se pune la rece pentru 30 de minute.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">2. Carnea de curcan deja pregătită la cuptor, se taie fâşii. Se pune într-o tigaie adâncă împreună cu cimbrul, sarea şi piperul.
